Espresso Chocolate Mousse

This velvety treat combines the bold richness of espresso with the decadence of dark chocolate, creating a heavenly combination of flavours and textures. Ingredients:

  • 200g dark chocolate, chopped
  • 2 shots of Robust Specialty Blend espresso, cooled to room temperature
  • 3 large eggs, separated
  • 2 tablespoons sugar
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions:

  1. In a heatproof bowl, melt the dark chocolate over a pot of simmering water or using a microwave. Once melted, remove from heat and let it cool slightly.
  2. Add in the cooled Robust Specialty Blend espresso into the melted chocolate and stir, combining the rich coffee flavour with the chocolatey goodness. Allow the mixture to cool completely.
  3. In a separate bowl, whisk the egg yolks with one tablespoon of sugar until pale and slightly thickened. Add this mixture to the cooled chocolate-espresso blend and mix well.
  4. In another clean, dry bowl, whip the egg whites with a pinch of salt until soft peaks form. Gradually add the remaining tablespoon of sugar and continue whipping until glossy and stiff peaks form.
  5. Gently fold the whipped egg whites into the chocolate mixture until well combined. Be careful not to deflate the air from the egg whites, ensuring a light and airy texture.
  6. In a separate bowl, whip the heavy cream and vanilla extract until soft peaks form. Carefully fold the whipped cream into the chocolate mixture, creating a velvety mousse.
  7. Spoon the mousse into individual serving glasses or ramekins. Chill in the refrigerator for at least 2 hours, allowing the mousse to set and flavours to meld.
